I think Ianto's been raised to be a nice and proper boy, and rebelled against his master tailor father's traditionally teaching in his teens because that's what all teens do, but he's long mastered that A-class servant act and found it really useful in TW.
Still, it is a bit like when I've read once that a Japanese traditional opera master was a long haired hippy and played in a rock band in his UK university years...
